What is okonomiyaki? It is an Osaka specialty that is a popular favorite of the Japanese people. Flour is mixed with stock. We add shredded cabbage, grated Japanese yam, and eggs. The batter is then cooked on a hot iron plate called teppan. A variety of ingredients include pork, squid, shrimp, cheese, or anything you like. “Okonomi” means “as you like it.” Finally, it is topped with the special sauce, mayonnaise, laver flakes, and bonito flakes.
