Mizutaki is special local cuisine of Hakata and this restaurant is its birthplace. Chicken meat is the main feature of the cuisine and it is ordered from southern Kyushu. Minced or boned chicken is boiled in simple chicken stock and eaten with cabbage, spicy citron seasoning and a citrus based sauce. There are only course menus. Reservation is needed. You can also order by mail a Ganso Hakata Mizutaki set (a set of vegetables and cooked meat and soup).
