Mizutaki is special local cuisine of Hakata and this restaurant is its birthplace. Chicken meat is the main feature of the cuisine and the chicken used here is delivered from southern Kyushu. Minced or boned chicken is boiled in simple chicken stock and eaten with cabbage, spicy citron seasoning and a citrus based sauce. There are only course menus. Reservation is needed. You can also order a Ganso Hakata Mizutaki set by mail (a set of vegetables and cooked meat and soup).
